Mayo Clinic Opens A Dedicated Gluten-Free Kitchen

Clinic now a validated gluten-free 'safe spot'


Mayo Clinic has joined a roster of Validated Gluten Free Safe Spots, according to an article on the OA Online website.

The certification by nonprofit Gluten Intolerance Group’s Gluten-Free Food Service (GFFS) indicates an independent verification of quality of food service establishments serving gluten-free food, according to the article.

Food establishments on Mayo Clinic’s Rochester, Minn., campus are now validated by GFFS to provide safe, gluten-free foods to patients, staff and visitors.

Mayo Clinic opened one central, dedicated gluten-free kitchen in partnership with its foodservice management provider. It was built to help advance Mayo Clinic’s celiac disease research program.

Mayo’s food service has also innovated in the salad are. It now offers fresh salads made by a robot, according to an article on the Food Management  website.

The four Fresh Food Robots are particularly popular with late-night workers and those missing the retail café’s salad bar, the article said.
